6. Stir-fry until the lotus seed paste has less water, then add sugar, 1/4 tsp of salt, and fry until the sugar melts
 
7. Add sunflower oil in small portions, stir with a spatula each time until the lotus seed paste is completely absorbed, and then add it a second time
 
8. After frying until the lotus seed paste can stick to the spatula, the dryness that can be kneaded into a ball by hand is suitable for making moon cakes. If you are making lotus seed paste buns, don't fry them too dry
 
Tips
1. Buying lotus seeds is better to buy fresh dried lotus seeds, the old lotus seeds have no fragrance. Although some lotus seeds have already been eaten, to be on the safe side, after soaking, you still have to break each one to see if there are still lotus hearts left, otherwise a pot of lotus paste will become bitter;
 
2. The more sugar and oil you put in, the longer the shelf life of lotus seed paste. I don’t use much sugar or oil in this recipe, so after sautéing it and letting it cool, I keep it in the refrigerator at 0°C. The finished mooncakes can only be kept outdoors for one night, and they can be stored in the refrigerator or freezer when they are not finished. Take it out and warm it up in advance when you want to eat it;
 
3. Some students said that fried lotus seed paste is easy to paste. I want to remind you that a thicker pot should be used, and a non-stick pot should be used. When the water is a little dry, start to add oil slowly. With the moistness of the oil, the lotus seed paste will not stick to the pan. In addition, when frying, you should often use a spatula to prevent the bottom from sticking;
 
4. When making mooncakes, stir-fry the filling a little bit and make it into a ball with your hands. Otherwise, it will be wrapped in stuffing and it will bulge up when you bake it. But for buns or something, don’t fry the stuffing too dry.
