(1) Crystallinity
When the concentration of the feed liquid increases, the characteristic of the crystal grains is called crystallinity. For liquids that are easy to crystallize, please choose forced circulation concentration equipment or concentration equipment with agitator.
 
(2) Viscosity
When the concentration of certain liquids increases, the viscosity also increases, resulting in a decrease in flow rate, a decrease in heat transfer coefficient and a decrease in production capacity. Therefore, for liquids with higher sweetness or increased viscosity after heating, forced circulation, scraper or falling film concentration equipment should be used.

(3) Corrosive
Some liquids have high acidity and are corrosive. In order to improve the corrosion resistance of the vacuum cooking pot, thickening equipment made of stainless steel or steel with a corrosion-resistant coating is usually used.
The equipment of the vacuum cooker must be selected according to the characteristics of the concentrated material and according to different needs.

(4) Heat sensitivity
The characteristics of food materials that undergo denaturation and oxidation at high temperatures or long-term heating are called heat sensitivity. In order to meet the special requirements of heat-sensitive components for the evaporation process, evaporation and concentration are usually carried out in a lower temperature environment during the production process, or instantaneous heating, evaporation and concentration are carried out at a higher temperature. The characteristic of the liquid material that forms a scale layer on the heating surface during the concentration process is called fouling. Fouling of liquid materials increases thermal resistance and reduces heat transfer coefficient. In severe cases, it may reduce production capacity and stop production. Therefore, for liquid materials with strong fouling properties, in order to prevent the formation of a fouling layer, a forced circulation type thickening device, a rising film thickening device with a large flow rate in the tube or a thickening device with a stirrer are usually used to prevent the formation of a scale layer. Sometimes electromagnetic anti-scaling and chemical anti-scaling methods are used, or concentration equipment that is more convenient to clean the scale layer is used.
